COOK - 自家製青醬及蝦仁青醬意粉 Home made Pesto Sauce with Pasta

比起Cream Sauce, 我更愛Pesto,沒有那麼膩,吃起來清新的香草香隱隱帶著果仁的香氣。
試過偷懶買現成的,的確方便,但herbs的香味一點也不突出,還是不要太懶,動手自己做的好吃。一次做一大瓶放入雪櫃,只要橄欖油蓋過香草,瓶蓋封好,可以放整個月慢慢吃。

今次用了這個青醬來做意粉,但用來做Pizza或者Bread Spread 都好好味!在我的書 "Meals on a Loveseat 美味在一起" 內有教做一個Green Pizza,就是棄茄汁而用這個Pesto來做一個全綠色的Pizza,好好味啊!


Pesto Sauce 自家製青醬

青醬材料:
羅勒葉 600g (切碎)
意大利芫荽 400g (切碎)
松子 150g
鮮巴馬臣芝士 150g (刨碎)
蒜頭 6瓣 (去皮)
特純橄欖油 600ml

1. 將所有材料準備好,放入攪拌機內打碎變成微杰的漿狀便成。
2. 在吃的時候,只拿需要的份量才加鹽調味。如要留起,放入清潔的瓶子內,加入足夠的特純橄欖油蓋過香草,放入雪櫃。


Pesto Sauce:
600g Basil (roughly chopped)
400g Italian Parsley (roughly chopped)
150g Pine Nuts 
150g Fresh Parmesan (shaved)
6 cloves Garlic (peeled)
600ml Extra Virgin Olive Oil

1. Put all the ingredients in a blender and blend until it becomes a liquid paste. 
2. Take only the portion you need and season with salt just before serving. If you want to save it for later use, keep in an air tight container, pour sufficient extra virgin olive oil to cover the surface of the herbs, then place in the fridge.



Pesto Pasta with Shrimp 蝦仁青醬意粉



蝦仁青醬意粉 (2人份)

蝦仁 12隻
意粉 180-200g
青醬 120g
松子 少許 (裝飾用)
鮮巴馬臣芝士 (刨片裝飾用)
蘿蔔苗 少許 (裝飾用)

1. 煲一大煲滾水,放入蝦仁灼熟隔水剩起備用。將意粉放入水內,跟據包裝指示減2分鐘煮熟意粉 (例:包裝指示須煮9分鐘,則7分鐘隔水拿起)
2. 在一煎鍋內放入適量橄欖油,煎香已熟的蝦仁,加入青醬,放入意粉,將鍋內材料完全混合煮2分鐘至意粉嚼勁。加入鹽及鮮磨黑胡椒調味。
3. 上碟後灑上烘過的松子,鮮巴馬臣芝士刨片及飾上蘿蔔苗即成。


Home made Pesto Pasta with Shrimp (Serves 2)

12 Shrimps (peeled)
180-200g Pasta
120g Pesto Sauce
Pine Nuts (for garnish)
Fresh Parmesan (Shaved for garnish)
Turnip Sprouts (for garnish)

1. Boil a big pot of water, cook the shrimp until pink, drain and set aside. Using the same pot of water, cook the pasta according to package instruction minus 2 minutes. (e.g. If package advise you to cook for 9 minutes, you cook for 7 minutes and drain.) 
2. In a pan, put olive oil and pan fry the shrimp until golden, add pesto and pasta, mix them well and cook for 2 minutes or until the pasta is al dente. Season with salt and pepper.
3. Serve on a plate, and garnish with toasted pine nuts, freshly shaved Parmesan and some turnip sprouts. Have a Happy Green Day!
